Fennel seeds grown at KoruKai Herb Farm on Banks Peninsula, New Zealand. Spray-free and chemical-free, our fennel is cultivated in biologically active living soil to produce richly aromatic, flavourful seeds.

Fennel has long been valued in both culinary and traditional herbal use. Its sweet, warming flavour with gentle anise notes pairs beautifully with fish, meat, and poultry dishes. Lightly dry roasting the seeds enhances their natural sweetness and depth of flavour. Ground fennel is a classic ingredient in curry powders and Chinese five spice, while crushed seeds add warmth and complexity to salad dressings, savoury baking, and sweet treats.

We especially love adding slightly crushed fennel seeds to focaccia and traditional rye sourdough bread, where their subtle sweetness and digestive qualities make them a perfect addition.

Traditionally used as a digestive herb, fennel seeds have been enjoyed in India for thousands of years to support digestion and help relieve intestinal gas. Modern studies suggest that fennel’s naturally occurring volatile oils contribute to these beneficial properties. In India, fennel seeds are commonly chewed after meals as a natural breath freshener and digestive aid.

Fennel also makes a beautiful digestive tea, especially when blended with meadowsweet and peppermint.
