Our bannetons are hand-crafted from natural rattan cane and come with a linen liner. They meet the high EU food standards.
Rattan is strong and lightweight, making the baskets very durable. 

Please note that the below loaf weights are in grams and that this is the weight of the dough when it goes into the bannetons, not just the flour weight.

We have four sizes available (select above):

Size A: Round big banneton for 750g-1kg loaves. 25cm diameter and 8cm height
Size B: Rectangular big banneton for 550-850g loaves. 28cm length, 14cm width and 8cm height
Size C: Round small banneton for 350-450g loaves. 16cm diameter and 6cm height
Size D: Rectangular small banneton for 350-450g loaves. 17cm length, 12cm width and 6cm height

Please note that the baskets are handcrafted and very small variations are possible to the measurements stated above.




Fitted natural linen liner comes with each banneton.




Size A: Round Banneton with 25 cm diameter and 8cm height





Size B: Rectangular big banneton with 28cm length, 14cm width and 8cm height





Size C:
Round small banneton with 16cm diameter and 6cm height




Size D: Rectangular small banneton with 17cm length, 12cm width and 6cm height




How to use:
Before the first use: Thoroughly wash the linen liners and rattan baskets. Air-dry in full sun before storing in a dry place.
When making bread: Simply dust the banneton liner with flour and place your shaped loaf into the banneton (seam side up). If your dough is very moist and sticky roll it in some coarsly ground flour to cover it with a dry layer prior to placing it into the bannetons.
When using it without linen, gently mist the rattan cane with water and then dust it heavily with rice flour, tip out excess flour before adding the bread dough.
Let the dough do its final proof and once done, gently turn the dough out onto the baking tray.
Do not bake the loaf in the bannetons! Remove before baking.

Care instructions: Wash baskets with warm water and let air dry thoroughly before using. Linen covers can be washed in the washing machine below 30 C.
After use, let the baskets dry unstacked for a few hours before putting them away. Wash them occasionally. Store in a dry place between uses and let sun dry occasionally to prevent mould.

I got an oval banneton and it is great. The loaf comes out with ease and the washable linen liner is fab. I have been using mine for over a year now and it is still good as gold. Will get a round one for Christmas :)

Amazing quality bannetons!

These are amazing bannetons, great pro-quality, natural cane and linen liner. I got a round shape proofing basket mid 2020 and was a great adding to my sourdough making. you can use it with or without the liner and they even send the care instructions so you make the best out of your banneton :)
