Elephant Garlic is becoming increasingly popular for its large bulbs and mild, distinctive flavour. Easier to grow than true garlic, it produces reliable crops in a wide range of home gardens and is well suited to New Zealand conditions.

Elephant Garlic belongs to the leek family and grows into a large, vigorous plant similar in size to a leek, producing impressively large garlic heads with oversized cloves. Its mild flavour makes it wonderfully versatile in the kitchen and a favourite for those who find traditional garlic too strong.

The large cloves are easy to peel and can be enjoyed raw in salads, lightly steamed or boiled as a vegetable, cooked into soups and stews, or roasted whole in the oven for a rich, sweet flavour.

Our Elephant Garlic is organically grown at KoruKai Herb Farm without the use of chemical fertilisers, pesticides, herbicides, or fungicides.

Growing Guide

Prepare and plant Elephant Garlic in a similar way to regular garlic. See our thorough garlic blog for more info. Best to plant as soon as you receive the cloves. 

  • Planting time: April to July
  • Spacing: 18–20 cm between bulbs
  • Depth: Plant cloves 4–6 cm deep
  • Position: Full sun
  • Soil: Rich, fertile, well-drained soil
  • Harvest: Ready in approximately 7 months


With good soil preparation and regular feeding, Elephant Garlic produces generous harvests and stores well after curing.

Great success

I harvested a fantastic crop of 3 nice sized elephants. I now have 12 cloves to replant and a few smaller ones to eat. Bring on next season!

We planted these in our raised garden and they are about 50cm tall now and looking incredibly strong and healthy. Different friends have admired them several times and asked where we got the bulbs.

Stachys affinis

The tubers have a distinct shape and look a bit like a grub. When eaten raw they are crisp and sweet like a water chestnut. When fried they are more starchy, soft and sweet, resembling a slightly nutty potato or kumara. In France they are known as crosnes and are typically served braised in herbs and butter, which is our preferred way to eat them. They are a great brain food.

Order is for a starter bag of about 5 tubers.

This cover crop seeds or green manure seeds mix has been blended to achieve maximum benefit. It can help with common challenges such as compaction, weed pressure, pests and diseases, low fertility, leaching and erosion.

Best sown between August/September and December/January, depending on your climate.

We have bred these over the years and selected for very orange and large flower heads. They make a gorgeous medicinal oil.

Tomato Tangella seeds

This is our favourite tomato to eat raw and for salads. Low in acidity and great flavour.

It produces orange, medium sized and round tomatoes.

This orange tomato contains higher levels of Tetra-cis-lycopene which is easily absorbed in the raw fruit and helps to promote health and fight against cancer and heart disease.
