At KoruKai Herb Farm, compost making is central to everything we grow, because we see it as the foundation of healthy soil, resilient plants, and nutrient-dense food.
High-quality compost is surprisingly difficult to find commercially. In our experience, the differences in quality between sources are enormous, particularly when it comes to microbial diversity and balance. We have yet to find a commercial supplier that consistently provides compost with the full spectrum of beneficial microorganisms needed to support strong, disease-resistant plant growth. Often municipal compost falls short of these biological standards.
Over the past 10+ years, we have produced compost in a range of environments—from a small urban section (500m²) to a working farm producing 4–5 tonnes annually. This hands-on experience has given us a deep understanding of what it takes to create reliable, high-performance compost in both city and rural settings.
In this workshop, we share our refined no-turn hot composting method, developed through years of observation, testing, and practical refinement. This system is designed to be efficient, low-maintenance, and highly effective—even in urban environments. With the right setup, you can produce a hot, active compost pile in the middle of a city without disturbing your neighbours.
You will also learn how to make and use compost extract, a powerful way to multiply and apply the biology from your own compost directly into your garden soil, helping to accelerate soil regeneration and plant health.

Healthy soil is the foundation of all life—environmental, animal, plant, and human health. It is the base of resilient ecosystems and one of the most powerful solutions to many of the challenges we face today.
Compost plays a central role in rebuilding and maintaining this foundation. It recycles nutrients, feeds soil microorganisms, improves soil structure, and supports the growth of healthy, nutrient-dense food that is naturally more resilient to pests and disease. At KoruKai Herb Farm, we are passionate about sharing our knowledge and practical experience so you can confidently produce your own high-quality compost.
This online course is self-paced and accessible 24/7, allowing you to move through the material quickly or take your time and revisit sections as needed. The course includes approximately 5 hours of high-quality video content, along with supporting reading material, diagrams, graphs, and charts. In total, you should allow around 15 hours to complete the workshop, plus additional hands-on time to gather materials, build your compost, and monitor its progress.
You will also receive a downloadable personal workbook to support your learning, deepen understanding, and guide you through practical application.

Qualifications & training:
Cornelia is passionate about compost and produces a new hot compost pile every 2–4 weeks to maintain a continuous supply for KoruKai Herb Farm. She is an herbalist, soil educator, and slow food advocate with a strong focus on simple living, DIY skills, herbs, and self-sufficiency.
Her training in organic horticulture, soil biology, permaculture, herbal medicine, and regenerative farming—combined with years of hands-on experience living and working on a farm in Pigeon Bay—gives her a grounded, practical understanding of how to grow nutrient-dense food and restore soil health.
She teaches workshops on sustainable food systems, composting, whole foods, fermentation, primal nutrition, and organic gardening. Her curiosity and ongoing engagement with emerging soil and health science keep her work current and evolving.
Qualifications & training:
Kai is passionate about permaculture design and the regeneration of landscapes through intelligent, practical systems. With a strong design and technical background, he focuses on creating solutions that work with nature rather than against it.
He enjoys observing natural systems and designing self-regulating, low-input solutions that improve over time. On their steep Banks Peninsula farm, this includes practical innovations such as portable compost slurry sprayers and systems adapted for terrain that cannot be accessed by machinery.
Forest gardens, resilient ecosystems, and functional design are at the core of his work.
Kai also provides technical support for online courses and is available to help with login issues or course access when needed.

Have just started using the first batch of compost now (Spring) that was constructed in Autumn and am really happy with the results.<br /> <br /> In my opinion, this course has an amazing depth of information, the instruction is clear and there is support when needed.<br /> <br /> With a learning style of sometimes jumping into the practical side too quickly and thinking I know it all, it was brilliant to be able to re-watch videos a few times and ask for advice when needed as I experimented, made mistakes and then succeeded.<br /> <br /> Keeping temperature/moisture/materials etc records in your workbook is really helpful to refer back to as time goes by and as you start another pile.<br /> <br /> You may not have exactly the same materials as used in the videos but that's not important as you are shown alternatives and taught how to choose materials based on what they add to the pile and what you have available. You start to understand the concept / ratios and see materials everywhere.<br /> <br /> Thank you Cornelia and Kai for creating a really useful course that contains so much knowledge from your years of experience. I thought it might be a little daunting however the different stages are conveyed in a way that is logical, easy to understand and with a sense of humour too! I joined the course because of the "no turning"! I have been playing with compost for years, but mostly buying in as I live in town. I've tried other methods with other people with limited success. This course offers everything to do with composting and I'm excited to join up.
Thanks Cornelia and Kai! after i finished watching the workshop a few times i made 2 heaps myself. the first one was too dry in the middle of northlands summer...but the last one was success! it heated up to 60 degrees after 4 days and stayed around there for a few days.<br />

I just made my first pile on Sunday, and it was a lot of fun! Great feeling 'tucking it in' with the cover. I'm monitoring the temp and will pop some info online soon - so far it's climbed from 25 avg to 30 so slowly building... Will soon see if I've got the mix right & am glad you included troubleshooting info. Really enjoying the course.
I've just finished my second run-through of this incredible course on composting. Before I commenced, I thought I knew a thing or two about composting. It turns out I knew very little.<br /> <br /> I love many aspects of this course. It is extremely practical yet contains a lot of relevant theory. Initially, some of the theory appeared (potentially) overwhelming, but very quickly, we saw how easy it was to apply.<br /> <br /> The videos are very down-to-earth, easy to follow, and have step-by-step instructions. Where required, detailed notes are given underneath the videos. Each page has a comment thread, and Kai is very prompt in replying. It is obvious that the whole course was extensively mapped out before they started creating it. - it flows so well, the sequence makes sense. And unlike many online courses, there are no ambiguous aspects where the user wonders, 'Why am I learning about this aspect?' ... or ... 'What does this have to do with the topic?' (I'm an online course creator with 10,000-ish hours of experience in the game, so these points all stand out to me.)<br /> <br /> All in all, it was a fantastic experience. Thanks so much, Cornelia and Kai, for this incredible learning journey. I recommend this to anyone who wants to learn how to make exceptional compost. It is an ideal entry point into learning how to become a successful gardener via the expertise of Cornelia and Kai.
I have found the course really helpful and have made three successful hot compost heaps since undertaking the course. Although I have made compost for years I knew I hadn't nailed it as far as ridding the compost of weed seeds and possible pathogens and I had never attempted to build the heap in one day before. Using your easy to follow instructions and explanations and the reinforcing videos and bullet points as well as the workbook to record materials used and temperature/time date, I feel I have refined and enhanced my practice significantly. Using your compost thermometer methodically and your troubleshooting tips have been a game changer. I'll know in six months how effective I have been in judging it right! I want to be able to make compost extract to build healthy soil and lively plants. I am not a digital native and I hadn't done an online course before, but I found it very accessible and easy to revisit for referencing. I really appreciated the care and integrity you had put in the design and delivery of the course and the way you responded so promptly to questions and difficulties. I would happily recommend it to anyone wanting to make their own high quality compost consistently.
