This galangal has been grown at KoruKai Herb Farm, Banks Peninsula. Free from synthetic fertiliser, pesticides and herbicides. 

GROWING INSTRUCTIONS

Plant into a pot as soon as you receive the galangal and water well in the first few weeks. Transplant into the garden or tunnel house in October/November.

It needs warm conditions all year and does best in a tunnel house with temperatures above 15 C. It also needs well-drained, friable soil with lots of organic matter, compost and vermicast. It likes frequent liquid feeds with seaweed or vermicast extract.

Steady moisture is best for it over the summer period, but not in winter to prevent rotting. Galangal can readily be grown in frost-free areas, where it is usually evergreen. However, it is hardier than ginger so it can be grown in frosty areas if it gets protection from winter frost and you give it as much warmth as possible.
In the South Island you may want to put it into a polytunnel or glasshouse. It also grows well in the North Island without a polytunnel.

It can be harvested at any time of the year, but best to dig up in winter.

Generally the rhizome is chopped into chunks then bruised with a mallet or the back of a cleaver to release the flavour during cooking. Then once the dish is served, you place these pieces to the side of the plate as they are usually too fibrous to chew.

We often grate the shoots or put junks into the food processor so they are edible when cooked.
