Fennel is often used to complement fish, meat, and poultry dishes. Dry roasting the seeds brings out the sweetness. Ground fennel is used in many curry powders and in Chinese five spice powder. Crushed seeds are used in salad dressings, and in savoury and sweet baking.

We love adding the slightly crushed seeds to a foccaccia and a traditional rye sourdough bread. It aids in digestion and is therefore great within a bread.

Medicinal uses: In India, dried fennel seeds are incredibly popular as an aid to digestion and have been used for this purpose for thousands of years. Modern scientific studies on the properties of fennel seeds are showing that their rich volatile oil content is primarily responsible for these digestive benefits and ability to clear intestinal gas so effectively.
Indians often chew fennel after a meal as a breath freshener and digestive aid. It is great in a digestive tea with meadosweet and peppermint.
