We will guide you on a foraging tour around KoruKai Herb Farm
. We will forage around the herb and vegetable gardens for edible weeds, which are growing abundantly in most gardens, at the coastal margin and parks around New Zealand.


Vegetables in the supermarkets have lost up to 80% of their nutritional value* compared to food that was available just over 30 years ago. Adding edible weeds high in minerals and vitamins to your diet is cheap, delicious and easy to do. We not only feed our bodies with highly nutritious food that has not been tempered with through breeding techniques to increase shelf life and transportability, but we also feed our soul, reduce stress and reconnect to our primal inner being. For millions of years humans ate what they gathered on a daily basis. That we are removed from growing and foraging our food and are now buying it from a supermarket is only a blink in the timeline of human evolution. Connecting to our roots can have a significant effect on us.

During this foraging tour you will learn about many plant species that are edible and that you can incorporate in your daily diet.

This is an informative morning where you will learn about many edible, nutritous and delicious weeds.

We will identify the weeds, gather and prepare them for a delicious and nutritious lunch (lunch included in the price). 

You will also receive a booklet containing over 15 edible weeds in detail with images, nutritional and medicinal value.

Come along to our stunning place in Pigeon Bay and be inspired to use nutritious weeds growing around you. While we forage and gather weeds for our lunch we will also point out some permaculture features on our property and explain some organic gardening techniques.
On KoruKai Herb Farm everything is grown spray-free and organically with an integrated pest and disease management. We measure the nutrient density in our vegetables and herbs with a Brix meter and do soil tests on a regular basis to help us with decision making. We implement permaculture principles wherever possible trying to close the "loop". We have a composting toilet and use water harvesting techniques like swales on contour on our hilly block. We keep Wiltshire sheep, ducks, chickens and weaner pigs. We have a Jersey house cow and transform the milk into butter, cheese and yoghurt.

*Various reasons are the cause of this tremendous loss in nutrition:

  1. plant breeding to maximise shelf life and to optimise the look has reduced the plants nutritional value
  2. the extensive use of chemicals in agriculture has caused the soils your food is grown in to be a mere medium. The microorganisms, worms and other creatures responsible for the plants' health, nutrition and well-being are being wiped out. The nutrition the plants receive are also chemical based and are generally NPK. Three minerals are not enough for a plant to reach their maximum potency, what about the other 80????

Please note: This is also the case for most organic produce.

Knowing where your food is growing will become more and more important in the future!!! We also offer gardening workshops to give you the know-how to grow your own food and be nourished.

Tutor: Cornelia Holten

With a background in teaching and a Masters Degree in Montessori Education, Cornelia is well equipped to present her knowledge in a fun and informative way.

A Certificate in Organic Horticulture, an Apprenticeship in Herbal Medicine and living on a farm in Pigeon Bay equip her with a lot of knowledge and experience with growing food and living a healthy life. Together with her husband Kai, who is the bee-keeper, mushroom-grower and permaculturist in the family, they raise their two children on a block with 15 acres. They grow all their vegetables, raise animals and run their herb farm business KoruKai.

 

Terms and Conditions

  • A spot is reserved as soon as the full payment is received.
  • There are maximum numbers for each workshop and you will be placed on a waiting list once the workshop is full. You will be updated via email if a space becomes available. Full refund is given for amount paid if no space is granted.
  • The workshop will start on time. Please make sure to arrive at least 10 minutes before the start of the workshop. You are welcome to come up to 30 minutes before the workshop and have a wander around our garden and property.
  • Please calculate enough time to get to our property. We are a scenic 1.5 hour drive from Christchurch in Pigeon Bay (details per email). If you arrive late please respect the running of the workshop.
  • Cancellation policy:
    • full refund is given if cancellation is made within 2 weeks of the workshop
    • 50% refund is given if cancellation is made 13-3 days before the workshop
    • no refund is given if cancellation is made within 2 days of the workshop
    • full refund is given if KoruKai is cancelling the workshop due to unforeseen circumstances
    • minimum number of attendees for the workshop to go ahead is 10. If the minimum number is not reached two days before the workshop, the workshop is cancelled per email notification and any payment made will be refunded
    • full refund is given if attendee cannot make the postponement date in case of rain on the actual workshop day (just applies to workshops with postponement date stated)

          I learned loads and was hugely impressed with all you have done!

          Thanks so much for an excellent morning with your garden tour. I learned loads and was hugely impressed with all you have done; In particular the degree of planning and organisation and how you have turned a very steep site to your advantage .
          It made me want to reassess my own garden and introduce more permaculture ...roll on a wormery!
